Air France Introduces New Michelin-Starred Menus in La Première Cabin
Starting in December, Air France is enhancing its in-flight dining experience with new menus on its La Première suites, offering a high-flying taste of fine French cuisine. Renowned triple Michelin-starred chef Emmanuel Renaut has teamed up with pastry chef Claire Heitzler, elected pastry chef of the year by Gault & Millau in 2013, to create an exceptional seasonal menu for Air France’s exclusive cabin.
Emmanuel Renaut’s Refined Seasonal Menu
Emmanuel Renaut, a celebrated chef and Meilleur Ouvrier de France, is renewing his collaboration with Air France to craft the La Première menu. This is the first time Renaut has designed all the starters and main dishes for the cabin’s menu. Known for his love of Savoyard cuisine, he uses seasonal, sustainable ingredients, including French-origin meats, locally sourced fish, and fresh vegetables, to create comforting yet indulgent dishes.
“My cuisine tells a story of simplicity, gourmet indulgence, and comfort,” said Renaut. “Nature is an endless source of inspiration, and I wanted to share that with Air France’s La Première customers.”
Savory Delights for La Première Passengers
The new menu features five inventive starters, such as Beaufort PDO soufflé, truffle cream of mushroom, and foie gras with salsify, blueberry, and onion chutney. The menu also highlights eight new dishes inspired by French and Savoyard culinary traditions, like polenta with wild mushrooms, spinach, and mountain cheese, and scallop quenelle with tangy cream sauce and root vegetables.
Claire Heitzler’s Exquisite Desserts
For the first time, Claire Heitzler is creating the dessert menu for Air France’s La Première cabin. Known for her use of French, seasonal products, Heitzler is offering La Première guests a true gourmet interlude with her signature creations. “I wanted to create a selection of pastries that celebrate French regions through flavors and delicacies,” said Heitzler.
Heitzler’s desserts, including a triple chocolate cloud and Castanéa, a dessert with Ardèche chestnuts and Corsican clementines, will gradually appear on the La Première menu over the coming months.
Available Flights in the Winter Season
This winter, Air France’s La Première cabin will be available on flights from Paris-Charles de Gaulle to a range of global destinations, including Abidjan, Dubai, Los Angeles, Miami, New York, São Paulo, Singapore, and Tokyo-Haneda, offering luxury travelers an unforgettable dining experience.
