United Polaris Launches Chef's Table Menus on Business Class Flights
United Airlines will introduce a new era of in-flight dining on August 1, partnering with Chef's Table — the brand behind the Emmy Award-winning Netflix documentary series — to bring chef-curated menus to its Polaris international business class on select long-haul routes.
Eleven globally recognized chefs, each representing a United hub city or key international gateway, have developed multi-course menus featuring an appetizer, salad, and entrée inspired by their culinary roots and home cities. The lineup includes Chef Nancy Silverton (Los Angeles), Chef Fariyal Abdullahi (Newark), Chef Jenner Tomaska (Chicago), Chef Justin Yu (Houston), Chef Penelope Wong (Denver), Chef David Barzelay (San Francisco), Chefs Isabel Coss and Matt Conroy (Washington DC), Chef Manu Buffara (São Paulo), Chef Tomos Parry (London), and Chef Tashi Gyamtso (Tokyo).
Dishes range from burrata with braised leeks and beef brasato from Silverton, to Brazilian shrimp stew with coconut rice from Buffara, poached scallop with yuzu-ginger glaze from Gyamtso, and slow-roasted lamb with smoked potatoes from Parry. Each meal is designed specifically for consumption at altitude, with ingredients and flavors engineered to remain exceptional at 35,000 feet.
Passengers will be able to pre-order their Chef's Table meal through United.com or the United app, starting five days before departure and up to 24 hours prior to the flight. Menus will rotate seasonally, with the first set running through September 2026 and a new lineup launching in October.
Alongside the food, United and Chef's Table will debut exclusive original video content on seatback screens from August 1, offering a behind-the-scenes look at how each menu was developed, from ingredient sourcing to test kitchen preparation. Chef's Table: Talks podcast episodes will also be available on inflight entertainment from July 1.
